“Soft, fluffy and aromatic butter cake, with my super easy to follow recipe.”
Suddenly felt like eating an orange cake.. No frill, simply got some fresh oranges from NTUC Fairprice to bake myself an aromatic and scrumptious orange cake. Very simple to bake, and it’s definitely a worth-trying recipe, with the freshest and simplest ingredients.
Look how fluffy and moist the orange was. Children would love it most!
Yields 1 rectangle loaf tin (8-10 slices)
Ingredients
180g of self raising flour
180g of unsalted butter, room temperature
3 medium eggs (about 180g)
120g of raw sugar
80g of freshly squeezed orange juice
50g of plain yogurt
1/4 teaspoon ground of salt
Finely grated orange peels from 2 oranges (about 1 tablespoon)
Method
(1) Cream sugar and butter until pale and fluffy (about 8-10 minutes). Add eggs, one at a time. Add yogurt and orange juice.
(2) Add salt to flour, and sieve into butter mixture, in three batches. Use a spatula to fold in orange peels, and combine the ingredients well.
(3) Grease baking tin with butter and dust some flour on it. Pour batter into greased and dusted tin. Bake for 35 – 40 minutes (when inserted toothpick comes out clean) on 170deg Celsius.
1 slice of my orange butter cake counts about 190kcal.
Tips: I used raw sugar for my healthier option. The raw sugar would not dissolved completely when creaming with butter, but it’s ok as it would not affect the cake texture. However, go ahead if you prefer to use castor sugar which is easier to cream.
* Grate only the outer layer of orange peel and do not go all the way into grating the white fiber which might turn bitter after baked.
